  • 34 boneless, skinless chicken breasts
  • 2 cups salsa verde
  • 1 cup long-grain white rice
  • 6 cups low-sodium chicken broth
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tsp cumin powder
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and sauté diced onion and minced garlic until fragrant (about 3 minutes).
  2. Add chicken breasts, season with salt, pepper, and cumin; cook until golden brown (5 minutes per side). Remove from the pot and let cool slightly.
  3. Pour chicken broth and salsa verde into the same pot; stir to combine and bring to a gentle simmer.
  4. Add rice; cover and reduce heat to low, cooking until rice is tender (15-20 minutes).
  5. Shred cooled chicken and return it to the pot along with lime juice and cilantro; stir to blend flavors.
  6. Serve hot in bowls with optional garnishes of cilantro.
