  • 1 cup fresh or frozen cranberries
  • 1 cup diced apples (Granny Smith or Honeycrisp)
  • 2 tsp cinnamon
  • 1/4 cup brown sugar
  • 2 tbsp butter (unsalted)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Bake sweet potatoes for 45-60 minutes until tender. Let cool slightly.
  3. While baking, chop cranberries and apples, mix with brown sugar and cinnamon in a bowl.
  4. Cut baked sweet potatoes lengthwise, scoop out most flesh into a bowl, leaving some for structure.
  5. Mash sweet potato flesh with butter, salt, pepper, and cranberry-apple mixture until combined.
  6. Refill potato skins with the mixture and return to oven for another 15-20 minutes until heated through.
