  • 2 packs instant ramen noodles
  • 1 cup bell peppers, thinly sliced (assorted colors)
  • 1 cup carrots, julienned
  • 1/4 cup green onions, chopped
  • 3 tbsp soy sauce (low-sodium if preferred)
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Gather and prepare all ingredients.
  2. Cook ramen noodles according to package instructions. Drain and set aside with a drizzle of sesame oil.
  3. In a large skillet over medium-high heat, add vegetable oil. Sear the beef until browned on both sides (about 3-4 minutes). Remove from the pan.
  4. Sauté garlic and ginger in the same skillet for 30 seconds before adding bell peppers and carrots. Stir-fry until slightly softened.
  5. Return beef to the pan along with soy sauce, red pepper flakes, and cornstarch mixture. Stir well to coat everything evenly.
  6. Gently fold in cooked ramen noodles and cook for an additional minute until heated through.
  7. Serve hot, garnished with chopped green onions.
