  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 medium carrots, chopped
  • 1 bell pepper (any color), chopped
  • 2 cups fresh spinach
  • 1 can (14 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 2 cups low-sodium vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Instructions

  1. Chop all vegetables into bite-sized pieces.
  2. In a skillet over medium heat, sauté onion and garlic until translucent.
  3. Transfer the sautéed mixture to the crockpot. Add chickpeas, carrots, bell pepper, spinach, curry powder, coconut milk, and vegetable broth. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
