  • 2 lbs russet potatoes, peeled and cubed
  • 6 slices thick-cut bacon, chopped
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste
  • 1 tsp dried thyme

Instructions

  1. In a skillet over medium heat, cook the chopped bacon until crispy (about 7 minutes). Drain excess fat but leave some for flavor.
  2. Sauté the diced onion in the same skillet until translucent (about 5 minutes), then add minced garlic for an additional minute.
  3. Place cubed potatoes, cooked bacon, sautéed onion and garlic in a crockpot along with chicken broth, thyme, salt, and pepper. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 4 hours until potatoes are tender.
  5. Stir in heavy cream and shredded cheddar until melted (about 5 minutes on low heat).
  6. Serve hot with sliced green onions on top.
