Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese (full-fat)
  • 2 cups fresh spinach leaves
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional: 1 tsp garlic powder, juice of half a lemon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to about half an inch thick for easier rolling.
  3. In a bowl, mix cream cheese, spinach, mozzarella, Italian seasoning, salt, pepper, and optional garlic powder.
  4. Lay each chicken breast flat and spread the filling evenly over it. Roll tightly from one end.
  5. Heat olive oil in a skillet over medium-high heat. Sear each roll-up seam-side down for 3-4 minutes until golden brown.
  6. Transfer to a baking dish and bake for 25-30 minutes until the chicken is cooked through.
