- 4 boneless, skinless chicken breasts
- 8 oz cream cheese (full-fat)
- 2 cups fresh spinach leaves
- 1 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Optional: 1 tsp garlic powder, juice of half a lemon
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to about half an inch thick for easier rolling.
- In a bowl, mix cream cheese, spinach, mozzarella, Italian seasoning, salt, pepper, and optional garlic powder.
- Lay each chicken breast flat and spread the filling evenly over it. Roll tightly from one end.
- Heat olive oil in a skillet over medium-high heat. Sear each roll-up seam-side down for 3-4 minutes until golden brown.
- Transfer to a baking dish and bake for 25-30 minutes until the chicken is cooked through.
