  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 chipotle peppers in adobo sauce (more or less to taste)
  • 1/3 cup honey
  • 1/4 cup freshly squeezed lime juice
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients by finely chopping the garlic and measuring out the chipotle peppers.
  2. In a bowl, mix chipotle peppers, honey, lime juice, minced garlic, cumin, paprika, salt, and pepper until well combined.
  3. Place chicken breasts in the bottom of the crockpot and pour the sauce over them evenly.
  4. Add chicken broth around the edges of the pot to maintain moisture.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender enough to shred easily.
  6. Shred the chicken inside the pot with two forks and mix well with the sauce before serving.
