- 1 bay leaf

Instructions
- Rinse wild rice under cold water until clear; combine with vegetable broth in a pot and bring to a boil. Reduce heat to simmer for about 45 minutes until tender.
- In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
- Stir in diced carrots and celery; cook for another 5 minutes until slightly softened.
- Add cooked wild rice and its broth to the vegetable mixture; adjust consistency with additional broth if needed.
- Stir in cream or coconut milk, thyme, and bay leaf. Simmer gently for about 10 minutes, stirring occasionally.
- Taste and adjust seasoning with salt and pepper before removing bay leaf and serving.
