  • 4 cups low-sodium vegetable broth
  • 1 cup carrots, diced
  • 1 cup celery, diced

  • 2 cloves garlic, minced
  • 1 cup heavy cream or coconut milk
  • 1 tsp dried thyme (or 2 tsp fresh)
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse wild rice under cold water until clear; combine with vegetable broth in a pot and bring to a boil. Reduce heat to simmer for about 45 minutes until tender.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
  3. Stir in diced carrots and celery; cook for another 5 minutes until slightly softened.
  4. Add cooked wild rice and its broth to the vegetable mixture; adjust consistency with additional broth if needed.
  5. Stir in cream or coconut milk, thyme, and bay leaf. Simmer gently for about 10 minutes, stirring occasionally.
  6. Taste and adjust seasoning with salt and pepper before removing bay leaf and serving.
