  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 4 cups vegetable broth
  • Juice of 1 lime
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and garlic; sauté until translucent (3-4 minutes).
  2. Stir in diced sweet potatoes, cumin, and chili powder; cook for another 2-3 minutes.
  3. Pour in vegetable broth and diced tomatoes; bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
  4. In the last few minutes of cooking, add black beans and adjust seasoning if necessary. Finish with a squeeze of lime juice before serving.
