  • 2 cans (15 oz each) low-sodium chickpeas, rinsed
  • 4 cups fresh baby spinach
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium sweet onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
  • 4 cups low-sodium vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. 1. Rinse the chickpeas under cold water. Chop the onion, carrots, celery, and garlic finely.
  2. 2. In a skillet over medium heat, warm the olive oil. Sauté the onions until translucent; add garlic for the last minute to avoid burning.
  3. 3. Transfer the sautéed veggies to a crockpot. Add chickpeas, diced tomatoes, spinach, carrots, celery, cumin, paprika, and vegetable broth.
  4. 4. Stir well and season with salt and pepper to taste.
  5. 5. Cover and cook on low for 6-8 hours or high for 3-4 hours until everything is tender.
  6. 6. Check seasoning before serving; add lemon juice or fresh herbs if desired.
