  • 34 boneless, skinless chicken breasts
  • 1 cup uncooked long-grain rice
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley (optional)

Instructions

  1. Place chicken breasts at the bottom of the crockpot and season with salt and pepper.
  2. Chop carrots, celery, onion, and garlic; add them to the pot.
  3. Add uncooked rice over the vegetables.
  4. Pour in chicken broth until everything is submerged.
  5. Sprinkle thyme and add bay leaves; stir gently.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Once cooked, shred chicken with two forks and return to soup.
  8. Stir well and garnish with fresh parsley before serving.
