  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth

  • 1/4 tsp ground nutmeg
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables by peeling and dicing the butternut squash into even cubes. Chop the onion finely and mince the garlic.
  2. Add the butternut squash, onion, and garlic to the crockpot. Pour in enough vegetable broth to slightly cover the ingredients.
  3. Season with salt, pepper, cinnamon, and nutmeg. Drizzle olive oil on top and stir gently to combine.
  4. Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours until the squash is tender.
  5. For a creamy texture, puree the mixture using an immersion blender or in batches with a regular blender until smooth.
