  • 34 boneless, skinless chicken breasts
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp lemon juice (optional)
  • Fresh parsley for garnish

Instructions

  1. Prepare your ingredients by chopping carrots, celery, onion, and garlic into bite-sized pieces.
  2. Place the chopped vegetables and chicken breasts in the slow cooker. Pour in the chicken broth until everything is submerged.
  3. Add thyme, salt, and pepper on top of the ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  5. About 30 minutes before serving, stir in the rice.
  6. Shred the chicken directly in the slow cooker using two forks and stir well before serving.
