  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 4 medium Yukon Gold potatoes, cubed
  • 2 medium sweet onions, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 2 tsp fresh thyme leaves
  • 2 tsp fresh rosemary leaves
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 2 tbsp Worcestershire sauce

Instructions

  1. Brown the beef cubes in a skillet over medium heat for added flavor.
  2. In the same skillet, sauté onions and garlic until soft.
  3. In a crockpot, combine the browned beef, sautéed veggies, carrots, potatoes, bay leaves, thyme, rosemary, Worcestershire sauce, salt, pepper, and beef broth.
  4. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  5. Taste before serving; adjust seasoning if needed.
