  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 1 lb thinly sliced ribeye or sirloin beef
  • 1 cup bell peppers (mixed colors), sliced
  • 1 large yellow onion, sliced
  • 2 cups provolone cheese (or cheddar), shredded
  • 1 cup low-sodium beef broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by washing and thinly slicing the potatoes and vegetables.
  2. Layer the sliced potatoes in the bottom of a crockpot. Add a layer of beef followed by bell peppers and onions.
  3. Sprinkle garlic powder, onion powder, salt, and pepper over the layered ingredients.
  4. Pour the beef broth evenly over everything.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
  6. In the last 30 minutes of cooking, sprinkle cheese on top to melt before serving.
