  • 1/2 cup breadcrumbs (plain or Italian-seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, salt, and pepper. Mix gently until combined.
  2. Form small meatballs (about 1 inch in diameter) and place on a baking sheet.
  3. Heat olive oil in a large pot over medium heat. Sauté onions and carrots until softened (about 5 minutes), then add garlic for an additional minute.
  4. Stir in crushed tomatoes and vegetable broth; scrape any bits from the bottom of the pot.
  5. Gently add meatballs to the broth. Reduce heat to low and simmer for 30 minutes until cooked through.
  6. Adjust seasoning as necessary and stir in freshly chopped basil before serving.
