  • 2 ripe mangoes, diced
  • 1 medium cucumber, chopped
  • 1 red bell pepper, diced
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes (about 1/4 cup)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Wash all produce thoroughly. Peel and dice the mangoes.
  2. Chop the cucumber and bell pepper; slice the red onion thinly.
  3. In a large mixing bowl, combine the diced mango, cucumber, bell pepper, and onion.
  4. Squeeze fresh lime juice over the mixture and drizzle with olive oil. Season with salt and pepper.
  5. Toss gently until well mixed without mashing the mango.
  6. Let the salad sit for 10-15 minutes at room temperature to allow flavors to meld.
