  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 bell pepper (any color), diced
  • 1/2 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • Salt & pepper to taste
  • 1/2 cup feta cheese, crumbled (optional)

Instructions

  1. Rinse the chickpeas under cold water until the liquid runs clear; drain well.
  2. Chop the cucumber, halve the cherry tomatoes, finely slice the red onion, and dice the bell pepper.
  3. Finely chop the parsley and set aside.
  4. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  5. In a large mixing bowl, combine chickpeas, chopped vegetables, and parsley. Drizzle with dressing and toss gently until well combined.
  6. For optimal flavor, chill in the fridge for at least 30 minutes before serving.
