  • 2 medium sweet potatoes (about 2 cups), peeled and cubed
  • 1 cup bell peppers (any color), chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp chili powder
  • 2 tsp olive oil
  • Salt & pepper to taste

Instructions

  1. Prep your ingredients by dicing the onion, chopping bell peppers, and cubing the sweet potatoes.
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent (about 3-5 minutes).
  3. Stir in the ground beef, breaking it apart as it cooks until browned.
  4. Add sweet potato cubes to the skillet and cover for about 10 minutes until tender.
  5. Stir in chopped bell peppers and sprinkle cumin and chili powder over the mixture. Combine well.
  6. Taste and adjust seasoning with salt and pepper before serving warm.
