  • 1 cup salsa verde (store-bought or homemade)
  • 6 oz pepper jack cheese (sliced)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh cilantro (for garnish)
  • Juice of 1 lime

Instructions

  1. Rinse and pat dry the chicken breasts.
  2. Drizzle olive oil over the chicken and season both sides with salt, pepper, and garlic powder.
  3. Preheat the grill to medium-high heat (375°F). Grill the chicken for 6–7 minutes per side until cooked through.
  4. In the last few minutes of grilling, spoon salsa verde over each piece of chicken and top with pepper jack cheese. Close the grill lid until melted.
  5. Once done (internal temperature should reach 165°F), remove from grill and garnish with fresh cilantro and lime juice before serving.
