  • 2 lbs sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1 cup grated sharp cheddar cheese
  • 1 cup grated Gruyère cheese
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with butter.
  2. Slice sweet potatoes into uniform rounds (about 1/8 inch thick).
  3. Layer half of the sweet potato slices in the greased dish, seasoning with salt, pepper, and half the garlic. Repeat with remaining potatoes.
  4. In a bowl, mix heavy cream and nutmeg; pour over the layered potatoes.
  5. Top generously with both cheeses.
  6. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 20 minutes until bubbly and golden brown.
  7. Let rest for 10 minutes before serving.
