- 2 lbs Yukon Gold potatoes
- 6 slices thick-cut bacon
- 1/2 cup green onions, sliced
- 1 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 cup sharp cheddar cheese, shredded

- Salt and pepper to taste
Instructions
- Wash and cut the Yukon Gold potatoes into even chunks. Place in a pot with cold water and salt. Boil for 15-20 minutes until fork-tender. Drain and let cool.
- In a skillet over medium heat, fry bacon until crispy. Remove from heat, cool on paper towels, and chop into pieces.
- In a bowl, mix mayonnaise, Dijon mustard, salt, pepper, and smoked paprika until smooth.
- In a large bowl, add cooled potatoes, chopped bacon, green onions, and cheddar cheese. Pour dressing over mixture and gently fold until well combined.
- Cover with plastic wrap and refrigerate for at least one hour to allow flavors to meld.
