  • 2 lbs Yukon Gold potatoes
  • 6 slices thick-cut bacon
  • 1/2 cup green onions, sliced
  • 1 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Wash and cut the Yukon Gold potatoes into even chunks. Place in a pot with cold water and salt. Boil for 15-20 minutes until fork-tender. Drain and let cool.
  2. In a skillet over medium heat, fry bacon until crispy. Remove from heat, cool on paper towels, and chop into pieces.
  3. In a bowl, mix mayonnaise, Dijon mustard, salt, pepper, and smoked paprika until smooth.
  4. In a large bowl, add cooled potatoes, chopped bacon, green onions, and cheddar cheese. Pour dressing over mixture and gently fold until well combined.
  5. Cover with plastic wrap and refrigerate for at least one hour to allow flavors to meld.
