  • 2 tsp freshly cracked black peppercorns
  • 1 cup heavy cream
  • 2 shallots, finely chopped
  • 3 tbsp unsalted butter
  • 1/2 cup low-sodium beef broth
  • 2 tbsp olive oil

Instructions

  1. Remove the steak from the fridge and let it sit for 30 minutes to reach room temperature.
  2. Preheat a skillet over medium-high heat and add olive oil until shimmering. Sear the steak for 4-5 minutes on each side until browned.
  3. When you flip the steak, add shallots and cracked peppercorns to the skillet. Cook until shallots soften.
  4. After removing the steak from the pan, pour in beef broth while scraping up brown bits. Let it reduce slightly.
  5. Lower heat and stir in heavy cream and butter until smooth.
  6. Slice the steak against the grain and drizzle with sauce before serving.
