  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 cup full-fat sour cream
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with cooking spray or olive oil.
  2. Pat dry the chicken breasts and season generously with salt and pepper.
  3. In a skillet over medium-high heat, add olive oil and sear the chicken for 3-4 minutes on each side until golden brown.
  4. In a bowl, whisk together sour cream, minced garlic, thyme, and chicken broth until smooth.
  5. Pour half of the sauce into the baking dish, place the seared chicken on top, then drizzle with remaining sauce.
  6. Cover with foil and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C). Remove foil during the last 5 minutes for a golden crust.
