  • 1 cup freshly grated Parmesan cheese
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Rinse and pat dry the baby potatoes; halve them for even cooking.
  3. In a large bowl, toss the potato halves with olive oil, salt, pepper, garlic powder, oregano, and half of the Parmesan cheese until well-coated.
  4. Arrange the potatoes cut-side down on a parchment-lined baking sheet.

  6. Sprinkle remaining Parmesan on top and return to the oven for 5 minutes until melted.
