  • 4 large eggs
  • ¾ cup fresh orange juice
  • Zest of 2 oranges
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 4 oz cream cheese (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a large bowl, whisk together cake flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, beat softened butter until fluffy, then gradually add sugar. Mix in eggs one at a time followed by orange juice, zest, and vanilla.
  4. Gradually combine wet and dry mixtures on low speed until just blended.
  5. Divide batter between pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. For the glaze, beat cream cheese with powdered sugar and leftover orange juice until smooth. Drizzle over cooled cakes before stacking.
