  • 4 ears fresh corn, grilled and kernels removed
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tsp smoked chili powder
  • Juice of 2 limes (about 4 tbsp)
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crumbled Cotija cheese (or feta)
  • 1/4 cup chopped green onions

Instructions

  1. Grill the corn on medium heat for about 10-15 minutes until slightly charred, rotating occasionally. Remove and let cool before cutting the kernels off the cob.
  2. In a large bowl, mix together the mayonnaise and sour cream until smooth. Stir in the lime juice and chili powder.
  3. Fold in the grilled corn kernels, cilantro, and green onions gently to combine.
  4. Sprinkle the Cotija cheese over the mixture and fold until well incorporated.
  5. Transfer to a serving bowl, garnish with extra cilantro and lime wedges, and serve with tortilla chips or fresh veggies.
