- 1/2 cup crumbled Cotija cheese (or feta)
- 1/4 cup chopped green onions
Instructions
- Grill the corn on medium heat for about 10-15 minutes until slightly charred, rotating occasionally. Remove and let cool before cutting the kernels off the cob.
- In a large bowl, mix together the mayonnaise and sour cream until smooth. Stir in the lime juice and chili powder.
- Fold in the grilled corn kernels, cilantro, and green onions gently to combine.
- Sprinkle the Cotija cheese over the mixture and fold until well incorporated.
