  • 1/4 cup honey
  • 2 tbsp Sriracha sauce (adjust for spice level)
  • 2 tbsp ketchup
  • 1 tsp garlic powder
  • 2 cups jasmine or brown rice (uncooked)
  • 2 cups mixed vegetables (bell peppers, broccoli)
  • 2 tbsp olive oil
  • 1 tbsp toasted sesame seeds
  • 2 green onions, chopped

Instructions

  1. Prepare the glaze by mixing honey, Sriracha sauce, ketchup, and garlic powder in a bowl.
  2. Heat a non-stick skillet over medium-high heat. Cook salmon fillets skin-side down for 4-5 minutes until crispy; flip and cook for an additional 3-4 minutes while brushing with half of the glaze.
  3. While the salmon cooks, prepare rice according to package instructions and sauté vegetables in olive oil until tender-crisp.
  4. Assemble bowls by layering rice, placing salmon on top, and adding sautéed veggies. Drizzle remaining glaze over the salmon and garnish with sesame seeds and green onions.
