  • 2 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy (about 3-5 minutes).
  3. Add eggs one at a time along with vanilla extract; beat until well combined.
  4. In another bowl, whisk together flour, cocoa powder, espresso powder, and baking soda. Gradually mix into the wet ingredients until just combined.
  5. Fold in chocolate chips gently to avoid over-mixing.
  6. Drop rounded tablespoons of cookie dough onto prepared baking sheets about 2 inches apart.
  7. Bake for 10-12 minutes until edges are set but centers look slightly underbaked.
  8. Cool on baking sheets for a few minutes before transferring to wire racks.
