  • 3 cloves garlic, minced
  • 2 medium Yukon Gold potatoes, diced
  • 2 medium carrots, thinly sliced
  • 4 cups low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until no longer pink; drain excess fat.
  2. Sauté chopped onions and minced garlic until onions are translucent (about 3-4 minutes).
  3. Transfer the beef mixture to a crockpot and add diced potatoes and sliced carrots; stir to combine.
  4. Pour in chicken broth until ingredients are submerged; stir gently.
  5. Add Worcestershire sauce along with salt and pepper; mix well.
  6. Cover and cook on low for 6-8 hours or high for 4 hours.
  7. About 30 minutes before serving, stir in shredded mozzarella and cheddar cheese until melted.
