  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 lb russet or Yukon gold potatoes, chopped
  • 2 tbsp fresh thyme or parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides (about 5 minutes per side). Remove from skillet.
  3. In the same skillet, lower the heat and sauté minced garlic until fragrant (30 seconds). Add heavy cream and chicken broth; stir well.
  4. Return chicken to the skillet and simmer until cooked through (10 minutes).
  5. Toss potatoes with olive oil, salt, pepper, and herbs; spread on a baking sheet. Roast in the oven until crispy (25-30 minutes).
  6. Serve creamy garlic chicken alongside roasted potatoes, garnished with fresh herbs.
