  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas until smooth but slightly chunky.
  3. Mix in melted butter, granulated sugar, brown sugar, eggs, and vanilla until well combined.
  4. Gently fold in the flour, baking soda, salt, and cinnamon until just combined.
  5. In a small bowl, mix extra sugar and cinnamon for the swirl.
  6. Pour half of the batter into a greased loaf pan; sprinkle with half of the cinnamon-sugar mixture. Add remaining batter and top with more cinnamon-sugar.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
