  • 3 cups cooked jasmine rice (preferably day-old)
  • 1 lb boneless chicken thighs, diced
  • 4 green onions, finely chopped
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil
  • 2 large eggs, lightly beaten
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Dice chicken and mince garlic.
  2. Heat a large wok or non-stick pan over medium-high heat with 1 tablespoon of oil.
  3. Add chicken; season with salt and pepper. Cook until golden brown (5-7 minutes).
  4. Stir in minced garlic and frozen vegetables; cook until heated through (3-4 minutes).
  5. Gently add rice, soy sauce, and sesame oil; mix until well combined.
  6. Create a well in the center of the rice, add eggs, scramble until set, then mix everything together.
  7. Finish with chopped green onions on top.
