  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp Italian seasoning
  • 2 cups panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded whole milk mozzarella cheese
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper.
  3. Set up three shallow dishes: one with flour, one with beaten eggs mixed with Italian seasoning, and one filled with panko breadcrumbs.
  4. Coat each chicken breast in flour, then dip into the egg mixture, and finally roll in breadcrumbs until well-covered.
  5. Heat olive oil in a skillet over medium heat; sear the breaded chicken for about 5-7 minutes on each side until golden brown.
  6. Place the cooked chicken in the baking dish, spoon marinara sauce over each piece, and top with mozzarella and Parmesan cheese.
