  • 1 lb lean ground chicken
  • 1 cup seasoned breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Grease the slow cooker with cooking spray and set it to low heat.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, garlic powder, salt, and pepper until blended.
  3. Form mixture into golf ball-sized meatballs (about 1 inch) and place them in the slow cooker.
  4. Pour marinara sauce over the meatballs until they are submerged.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours until cooked through.
  6. About 30 minutes before serving, sprinkle shredded mozzarella on top and cover until melted.
