  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated parmesan cheese
  • 1 cup heavy cream
  • 2 tsp dried Italian herbs (oregano and basil)
  • 4 medium starchy potatoes (like Russets), cut into fries
  • 3 tbsp olive oil (divided)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat dry chicken breasts and season generously with salt and pepper.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear chicken for 5-7 minutes on each side until golden brown. Remove from skillet.
  4. In the same skillet, add minced garlic and sauté for 30 seconds. Pour in heavy cream, stirring continuously.
  5. Stir in parmesan cheese and dried herbs until melted and creamy.
  6. Return seared chicken to the skillet, spoon sauce over it, and transfer everything to the oven. Bake for 20 minutes.
  7. While chicken bakes, toss potato fries in remaining olive oil, salt, and pepper on a baking sheet. Bake alongside chicken for 25-30 minutes until golden brown.
  8. Serve chicken garnished with fresh parsley alongside crispy fries.
