- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1 medium yellow onion, finely chopped
- 2 tsp cumin
- 2 tsp chili powder
- 1 cup salsa
- 1 can (10 oz) enchilada sauce
- ½ cup sour cream
Instructions
- 1. Preheat the oven to 350°F (175°C).
- 2. In a skillet over medium heat, brown the ground beef until no longer pink. Add chopped onion and sauté until translucent. Stir in cumin and chili powder.
- 3. Fill each tortilla with about ¼ cup of the beef mixture and sprinkle cheese inside before rolling tightly.
- 4. Place rolled tortillas seam-side down in a baking dish. Pour enchilada sauce over them and top with remaining cheese.
- 5. Bake for 20-25 minutes until bubbly and golden brown. Serve warm with sour cream or guacamole.
