Instructions

  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In another bowl, whisk together flour and baking soda. Gradually add to the wet mixture until just combined.
  5. In a separate bowl, mix softened cream cheese with confectioners' sugar and lemon juice until smooth.
  6. Scoop dough balls onto a baking sheet, create an indentation in each ball, add cheesecake filling, and cover with more dough.
  7. Bake for 12-15 minutes or until golden brown around the edges. Let cool before serving.
