  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1/2 cup buffalo sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 thick slices sourdough bread
  • 2 tbsp unsalted butter
  • 4 oz cream cheese (softened)
  • 1/4 cup ranch dressing (optional)

Instructions

  1. Cook chicken in a skillet over medium heat for 6-7 minutes per side until fully cooked (internal temperature of 165°F). Shred the chicken and mix it with buffalo sauce.
  2. Spread softened butter on one side of each slice of sourdough. On the unbuttered side, layer shredded chicken and a generous amount of cheese.
  3. Heat a skillet over medium heat and grill sandwiches, butter-side down, for about 3-4 minutes until golden brown. Flip and grill until cheese melts.
  4. Slice in half and serve warm with ranch dressing or extra buffalo sauce.
