Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • ½ cup plain Greek yogurt
  • 1 cup fresh strawberries, diced
  • 2 tbsp honey or maple syrup
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract

Instructions

  1. In a bowl, combine rolled oats, chia seeds, Greek yogurt, and your choice of milk until well mixed.
  2. Stir in honey (or maple syrup) and vanilla extract to taste.
  3. Mash half of the fresh strawberries with a fork and fold into the mixture along with the remaining diced strawberries.
  4. Transfer to airtight jars or containers and refrigerate overnight (or at least 4 hours).
  5. In the morning, stir well before serving and top with extra sliced strawberries if desired.
