- 8 oz pasta (penne or fusilli)
- 8 oz fresh mozzarella cheese
- 4 garlic cloves, minced
- 14 oz canned diced tomatoes (preferably fire-roasted)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions
- Prepare your ingredients: Chop chicken into bite-sized pieces and mince garlic.
- In a large skillet over medium-high heat, heat olive oil and add chicken. Season with salt, pepper, and Italian seasoning. Cook until golden brown and fully cooked (6-8 minutes).
- Add minced garlic to the skillet; sauté for about 30 seconds until fragrant. Stir in canned diced tomatoes.
- Meanwhile, cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- Combine cooked pasta with the chicken-tomato mixture in the skillet. If needed, add reserved pasta water for better consistency.
