  • 2 red bell peppers, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium sweet onion, sliced
  • 3 cloves garlic, minced
  • 8 oz whole-wheat or gluten-free pasta (about 2 cups dry)
  • 1 cup low-sodium chicken stock
  • 2 tsp olive oil
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare your ingredients by chopping the chicken into bite-sized pieces and slicing the bell peppers and onion.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until golden brown and cooked through, about 5-7 minutes.
  3. Add sliced bell peppers and onion to the skillet. Sprinkle with cumin, smoked paprika, chili powder, salt, and pepper. Sauté until veggies are softened, about 5 minutes.
  4. Cook pasta according to package instructions until al dente. Drain and set aside.
  5. Remove veggies from the skillet. Pour in chicken stock to deglaze the pan and simmer briefly until slightly reduced.
  6. Return the cooked pasta to the skillet with veggies and sauce; stir well to combine. Garnish with cilantro if desired before serving hot.
