Ingredients

  • 1 lb lean ground beef
  • 8 oz rotini or penne pasta
  • 1 packet (1 oz) taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium sweet onion, chopped
  • 3 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 1 green bell pepper, chopped
  • ½ cup sour cream (optional)

Instructions

  1. Chop the onion and bell pepper into bite-sized pieces.
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent (about 3-5 minutes).
  3. Add ground beef to the skillet and cook until browned; drain excess fat.
  4. Transfer the beef mixture to a Crockpot. Add cooked pasta, diced tomatoes, taco seasoning, chicken broth, bell pepper, and half of the cheese. Stir to combine.
  5. Cook on low for 4-6 hours or high for 2-3 hours.
  6. About 30 minutes before serving, sprinkle remaining cheese on top and cover until melted.
