  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp curry powder
  • 2 bell peppers, chopped
  • 2 medium carrots, sliced
  • 1 cup chicken broth
  • 2 tbsp lime juice
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce or tamari
  • 1 tsp sugar (brown or coconut)
  • Fresh cilantro for garnish

Instructions

  1. Chop chicken into bite-sized pieces and slice bell peppers and carrots.
  2. Layer chicken in the bottom of the crockpot; add chopped vegetables on top.
  3. In a bowl, whisk together coconut milk, curry powder, garlic, ginger, soy sauce, sugar, and lime juice until smooth. Pour over chicken and veggies.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Check doneness near the end; adjust seasoning if necessary.
  6. Serve over rice or with naan bread, garnished with cilantro.
