  • 2 medium sweet potatoes (about 500g)
  • 1 cup split red lentils (200g)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, crushed
  • 1/4 cup cilantro or parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 cup plain breadcrumbs (60g)
  • 2 tbsp olive oil

Instructions

  1. Rinse the red lentils under cold water. In a pot, combine lentils with 2 cups of water, bring to a boil, then simmer for about 15 minutes until tender.
  2. Preheat the oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake on a sheet for about 45 minutes until soft.
  3. Scoop out baked sweet potato flesh into a bowl; add cooked lentils, onion, and garlic. Mash together until combined but slightly chunky.
  4. Stir in herbs, cumin, paprika, and breadcrumbs until the mixture holds together when shaped into patties.
  5. Form patties about 2-3 inches in diameter. Heat olive oil in a skillet over medium heat and cook each side for about 4-5 minutes until golden brown.
