Ingredients
- 2 medium sweet potatoes (about 500g)
- 1 cup split red lentils (200g)
- 1 medium onion, finely chopped
- 3 cloves garlic, crushed
- 1/4 cup cilantro or parsley, chopped
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 cup plain breadcrumbs (60g)
- 2 tbsp olive oil
Instructions
- Rinse the red lentils under cold water. In a pot, combine lentils with 2 cups of water, bring to a boil, then simmer for about 15 minutes until tender.
- Preheat the oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake on a sheet for about 45 minutes until soft.
- Scoop out baked sweet potato flesh into a bowl; add cooked lentils, onion, and garlic. Mash together until combined but slightly chunky.
- Stir in herbs, cumin, paprika, and breadcrumbs until the mixture holds together when shaped into patties.
- Form patties about 2-3 inches in diameter. Heat olive oil in a skillet over medium heat and cook each side for about 4-5 minutes until golden brown.
