  • 1 lb fresh salmon fillets, cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 3 tbsp unsalted butter
  • ¼ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Cut the salmon into bite-sized pieces.
  2. Set up a breading station: one bowl with flour seasoned with salt and pepper, another with beaten eggs, and a plate of panko breadcrumbs.
  3. Dredge each salmon piece in flour, dip in egg wash, then coat with panko.
  4. Line a baking sheet with parchment paper and arrange the breaded salmon bites. Lightly spray with cooking spray.
  5. Bake for 12-15 minutes until golden brown.
  6. For the garlic cream sauce: melt butter over medium heat, add minced garlic until fragrant. Stir in heavy cream and Parmesan cheese; season with salt and pepper. Cook until slightly thickened.
