  • 4 medium flour tortillas
  • 2 cups shredded chicken (cooked)
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup black beans (rinsed and drained)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Vegetable oil for frying

Instructions

  1. Preheat about an inch of vegetable oil in a deep skillet over medium heat.
  2. In a bowl, combine shredded chicken, black beans, cheddar cheese, cumin, and chili powder.
  3. Place 2 tablespoons of the filling onto one end of each tortilla and roll tightly.
  4. Fry the rolled taquitos seam-side down until golden brown on all sides (about 3-4 minutes per side).
