  • 1 medium onion, diced
  • 2 medium Yukon gold or red potatoes, diced (about 2 cups)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Salt, pepper, thyme, and paprika to taste

Instructions
