  • 3 cups low-sodium vegetable broth

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Chop tomatoes, onion, and garlic.
  2. Spread chopped vegetables on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for about 25 minutes until golden.
  3. Stir in fresh basil leaves just before blending.
  4. Blend roasted veggies with vegetable broth until smooth, adjusting consistency as desired.
  5. Return to pot, stir in sugar, and season further if needed. Simmer for 10 minutes.
