  • 1 medium cucumber, diced

  • 1 cup bell peppers (mixed colors), diced
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear to remove bitterness. Cook according to package instructions (approximately 15 minutes) until all water is absorbed.
  2. While quinoa cooks, chop cucumber, cherry tomatoes, red onion, and bell peppers into bite-sized pieces.
  3. In a large bowl, combine cooked quinoa with chopped vegetables and parsley.
  4. Drizzle olive oil and lemon juice over the mixture. Season with salt and pepper; toss gently until well combined.
  5. Chill in the fridge for at least 30 minutes before serving to enhance flavors.
